Delicious one-dish meal combining juicy peaches, pears, and savory beef.
Ingredients:
  • 1 beef arm, blade or rib pot roast, 4 pounds
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup dry white wine or Progresso™ beef flavored broth (from 32-ounce carton)
  • 2 medium onions, sliced
  • 2 medium tomatoes, chopped (1 1/2 cups)
  • 2 medium yams or sweet potatoes, peeled and cut into 1/4-inch slices
  • 1 can (16 ounces) sliced peaches in juice, drained
  • 1 can (16 ounces) sliced pears in juice, drained
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
Instructions:
  • Remove excess fat from the beef.
  • Brown the beef in a nonstick Dutch oven over medium heat, ensuring all sides are nicely seared; drain any excess fat. Season with salt and pepper, then add wine, onions, and tomatoes. Bring to a boil, then lower the heat, cover, and simmer for 3 hours.
  • Combine the yams, peaches, and pears in the pot. Cover and simmer for approximately 30 minutes, or until the yams and meat are tender.
  • Take out the beef, fruit, and vegetables; set aside and keep warm. Remove any fat from the liquid in the Dutch oven. Add water as needed to make 2 cups of liquid.
  • Combine cornstarch with cold water and incorporate into the liquid slowly. Bring to a boil, stirring continuously. Boil and stir for 1 minute. Serve alongside beef, fruit, and vegetables. Optionally, top with fresh chopped parsley for a finishing touch.
