Beef Short Rib French Onion Soup

"Upgrade classic French onion soup with succulent short ribs for a hearty meal. Prep in a slow cooker for easy home-cooked comfort."
Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons salt, or more to taste
  • 1 tablespoon ground black pepper, or more to taste
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 8 meaty beef short ribs
  • 0.5 cup butter
  • 8 sweet onions (such as Vidalia®), sliced and separated into rings
  • 2 quarts beef broth
  • 0.5 cup sherry
  • 12 sprigs fresh thyme
  • 1 (1 pound) loaf French bread, thinly sliced
  • 2 cups shredded Gruyere cheese
Instructions:
  • Combine flour, 2 tablespoons salt, 1 tablespoon black pepper, paprika, garlic powder, and onion powder in a bowl. Coat the beef short ribs with the seasoned flour mixture, reserving 3 tablespoons for later use.
  • In a large pot, heat olive oil over medium-high heat. Brown beef ribs in the hot oil for 3 to 5 minutes per side. Remove ribs and set aside.
  • Lower the heat to medium and melt the butter in the pot. Saute the sweet onions in the melted butter until they are soft and slightly browned, approximately 15 minutes. Adjust heat as needed to prevent burning.
  • Combine 3 tablespoons of the reserved seasoned flour with the onions, stirring together. Saute and stir for 10 minutes. Add in beef broth and sherry, bringing the mixture to a boil while stirring continuously until the soup slightly thickens. Season with salt and black pepper to taste.
  • Remove thyme leaves from sprigs and sprinkle into the soup. Place short ribs back into pot, lower heat to simmer, and cook until tender for about 2 1/2 hours. Stir soup occasionally.
  • Fire up the oven's broiler.
  • Fill oven-safe soup crocks with soup and place a short rib in each. Top each with 2 slices of French bread and sprinkle about 1/4 cup of Gruyère cheese over them.
  • Broil the crocks until the cheese is golden brown and bubbling, for about 2 to 3 minutes.
