Savory Beef Short Rib Dinner

Succulent beef ribs with a medley of vegetables - a hearty family meal!
Ingredients:
  • 2 pounds beef short ribs
  • 1/2 large onion, cut into 4 wedges
  • 2 sun-dried tomato halves (not oil-packed), cut into thin strips
  • 4 medium carrots, cut lengthwise in half, then cut crosswise in half
  • 8 small red potatoes (1 pound)
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried basil leaves
  • 1/2 cup dry red wine or water
  • 1 cup water
  • 1 teaspoon beef bouillon granules
  • 2 tablespoons all-purpose flour
Instructions:
  • In a large nonstick skillet, sear the ribs over medium-high heat until beautifully browned on all sides. As the ribs cook, assemble a flavorful base in a 4- to 6-quart slow cooker with layers of onion, tomatoes, carrots, potatoes, and garlic.
  • Layer the ribs over the bed of vegetables in the cooker. Season the ribs generously with salt, thyme, basil, and pepper. In the same skillet, remove any excess fat, then combine the wine, 1/2 cup of water, and bouillon. Bring the mixture to a boil over medium heat, stirring occasionally. Finally, carefully pour the hot wine mixture over the ribs.
  • Simmer the ribs covered on low heat for 8 to 10 hours, or until they are tender.
  • Remove the ribs and vegetables using a slotted spoon and transfer them to a serving bowl. Skim off any excess fat from the juices in the cooker before serving.
  • Combine flour with 1/2 cup of water in a 4-cup glass measuring cup or medium microwave-safe bowl until smooth. Mix in the juices from the cooker and microwave uncovered on High for 3 to 4 minutes, stirring halfway, until the mixture boils. Pour the sauce over the ribs and vegetables.
