Soboro: A classic Japanese dish, sweet and tangy, perfect over rice for a crowd-pleasing meal.
Ingredients:
  • 400.00 gm jasmine rice
  • 62.50 ml cooking sake
  • 32.00 gm brown sugar
  • 62.50 ml mirin
  • 65.63 gm salt-reduced soy sauce
  • 36.80 gm vegetable oil
  • 650g lean beef mince
  • 4 green onions, thinly sliced
  • 2 bunches broccolini, trimmed
  • 410g can baby corn spears, drained, halved lengthways
Instructions:
  • Prepare rice as directed on the packet. Mix together sake, sugar, mirin, and soy sauce in a small jug.
  • In a hot wok or large frying pan, sizzle the oil, then add the mince. Cook until browned, about 5-7 minutes. Pour in the sauce mixture and half of the onion. Let it come to a lively boil, then reduce to a simmer for 2 minutes until slightly thickened.
  • While the flavors meld together, gently blanch broccolini and corn in a pot of bubbling water for 2 minutes or until perfectly tender. Drain well. Arrange rice on serving plates, layer with mince mixture and sprinkle with the rest of the onion. Serve alongside the delightful broccolini and corn.
