Impress with roasted beef tenderloin and creamy horseradish sauce for a memorable Christmas feast.
Ingredients:
  • 2 lb beef tenderloin, trimmed of fat
  • 4 cloves garlic, finely chopped
  • 2 tablespoons chopped fresh thyme leaves
  • 1 tablespoon chopped fresh rosemary leaves
  • 1 tablespoon freshly ground pepper
  • 2 teaspoons kosher (coarse) salt
  • 1 tablespoon olive oil
  • 1 cup sour cream
  • 4 teaspoons prepared horseradish
  • 1 teaspoon grated lemon peel
Instructions:
  • Preheat the oven to 400°F. Line a 15x10x1-inch pan with foil and place the beef in the pan, tucking the narrow end under.
  • Combine minced garlic, 1 tablespoon of thyme, rosemary, pepper, salt, and oil in a small bowl. Massage the flavorful mixture onto all sides of the beef.
  • Bake for 35 to 50 minutes until cooked to your liking. Allow it to rest for 10 minutes before slicing.
  • Combine sour cream, horseradish, lemon peel, and remaining thyme in a small bowl.
  • Slice the tenderloin into 1/2-inch pieces and enjoy with a flavorful thyme-horseradish cream.
