Beef Tenderloin with Herb-Dijon Crust

Impress with a showstopping herb-crusted roast.
Ingredients:
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh thyme leaves
  • 1/4 cup chopped fresh oregano leaves
  • 3 cloves garlic, finely chopped
  • 2 lb beef tenderloin, trimmed
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons Dijon mustard
Instructions:
  • Preheat the oven to 400°F. Combine parsley, basil, thyme, oregano, and garlic in a small bowl; set aside.
  • Prepare the roasting pan with a light coat of cooking spray. Lay the beef in the pan and season with salt and pepper. Smear mustard evenly on the beef, then evenly spread the parsley mixture on top. Insert an ovenproof meat thermometer into the center of the thickest part of the beef.
  • Bake without cover for 35 to 45 minutes until the thermometer shows at least 140°F (for medium-rare).
  • Allow the beef to rest on a cutting board, covered with foil, for 15 minutes until the thermometer reads 145°F. This resting period will make carving easier as the temperature continues to rise about 5°F. Slice the beef into 1/2-inch-thick pieces.
