Herb Crusted Beef Tenderloin

Savor a flavorful beef tenderloin with crispy breadcrumb and herb crust by Progresso®.
Ingredients:
  • 1 beef tenderloin (2 1/2 to 3 lb), trimmed of fat
  • 5 teaspoons Dijon mustard
  • 1/2 cup Progresso™ panko crispy bread crumbs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh rosemary leaves
  • 2 tablespoons chopped fresh thyme leaves
  • 1 tablespoon coarse (kosher or sea) salt
  • 1 tablespoon freshly ground pepper
  • 10 cloves garlic, finely chopped
  • Fresh rosemary sprigs, if desired
Instructions:
  • Preheat the oven to 500°F. Tuck the small end of the beef under about 6 inches and tie with kitchen string at 1 1/2-inch intervals. Place the beef in a shallow roasting pan. Brush the beef with mustard. In a small bowl, combine bread crumbs with the remaining ingredients. Gently press the bread crumb mixture onto the beef. Insert an ovenproof meat thermometer into the thickest part of the beef.
  • Preheat the oven to 400°F and bake uncovered for 10 minutes. Then, lower the oven temperature to 350°F and continue baking for 30 minutes or until the thermometer registers 135°F for medium-rare or 150°F for medium. Let it rest for 20 minutes under a loose foil tent until the thermometer reads 145°F for medium-rare or 160°F for medium. Remove the string from the beef, carve, and garnish with rosemary sprigs.
