Quickly recreate a gourmet roast beef sandwich with melty mozzarella and basil pesto at home.
Ingredients:
  • 8 slices Italian bread, 1/2 inch thick
  • 2 tablespoons butter or margarine, softened
  • 1/4 cup basil pesto
  • 1/2 lb thinly sliced cooked deli roast beef
  • 4 slices (1 oz each) mozzarella cheese
  • Pasta sauce, warmed, if desired
Instructions:
  • Butter one side of each bread slice. Spread 1 tablespoon of pesto on the unbuttered side of 4 bread slices. Place the buttered sides down in a 12-inch skillet or grill pan. Top with beef, cheese, and the remaining bread slices with buttered sides facing up.
  • Heat the mixture over medium heat for 4 to 5 minutes, turning halfway, until the bread is crispy and the cheese is melted. Serve alongside pasta sauce.
