Prosciutto-wrapped beef with pesto

Create a vibrant Christmas dish with basil pesto beef.
Ingredients:
  • 14 slices (about 120g) prosciutto
  • 1 x 150g ctn Baby Spinach with Cashew & Parmesan Chunky Dip
  • 1.5kg-piece beef fillet
  • Fresh basil leaves, to serve
Instructions:
  • Preheat your oven to 200°C. Lay out 7 slices of prosciutto side-by-side, slightly overlapping, to form a rectangle. Repeat with the rest of the prosciutto slices, overlapping slightly, to create another rectangle alongside the first one.
  • Spread the flavorful dip on the beef, then layer it on top of the prosciutto. Roll it up carefully to seal in the delicious flavors. Transfer the beef, seam-side down, to a roasting pan and cook for 45 minutes until it reaches your preferred level of doneness. Let it rest for 10 minutes on a plate covered with foil. Finish by garnishing with fresh basil for a pop of color and added freshness. Enjoy!
