Indulge in savory prosciutto-wrapped pepper beef paired perfectly with crispy roast potatoes.
Ingredients:
  • Grain mustard, to serve
  • 1kg scotch fillet
  • 18.20 gm olive oil
  • 20.00 ml black pepper, cracked
  • 3 sprigs thyme, chopped
  • Zest of 1 lemon, finely grated
  • 8 slices prosciutto
  • 123.75 gm red wine
  • Potatoes, roasted, to serve
Instructions:
  • Preheat the oven to 180C. Weigh the beef and determine the cooking time (15-20 minutes per 500g for rare).
  • Coat the beef with oil. Press on a mixture of pepper, thyme, and zest. Wrap prosciutto around the beef, slightly overlapping.
  • Lay the beef in a baking dish, wrapping the ends of the prosciutto under the fillet, then generously pour red wine over the meat.
  • Bake for 35-40 minutes until done to your liking. Cover and let it rest for 5-10 minutes before serving.
  • Arrange thinly sliced beef alongside crispy roasted potatoes and a side of tangy grain mustard. Serve with a variety of fresh vegetables for a delicious and balanced meal.
