Prosciutto-wrapped mozzarella stuffed in marinated cherry peppers, a delicious antipasto for your Italian feast.
Ingredients:
  • 10 cherry peppers
  • 1 (7 ounce) package mozzarella cheese
  • 5 slices prosciutto
  • 2 cups olive oil
  • 3 tablespoons grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Hollow out the peppers by cutting a circular shape around the stem at a slanted angle. Remove the tops and scoop out the seeds and membranes, similar to how you would hollow out a small pumpkin.
  • Cut the mozzarella into small cubes, slightly varying the size to match the peppers. Halve the prosciutto slices and wrap each around a mozzarella cube before stuffing them inside the peppers.
  • Combine olive oil, Parmesan cheese, garlic, oregano, thyme, salt, black pepper, and red pepper in a jar or lidded container and mix thoroughly.
  • Combine the peppers with the oil mixture and cover tightly. Allow the flavors to meld for 5 to 6 hours. Enjoy directly from the jar.
