Prawns with romesco sauce

Prawns with creamy romesco sauce - irresistible finger food.
Ingredients:
  • 24 (about 1kg) medium green king prawns
  • 8 slices prosciutto
  • 36.40 gm extra virgin olive oil
  • Fresh oregano leaves, to serve
  • 250g chargrilled red capsicum
  • 1 vine-ripened tomato, chopped
  • 62.50 ml blanched almonds, toasted
  • 62.50 ml fresh flat-leaf parsley leaves
  • 1 small garlic clove, chopped
  • 18.20 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 1.25 gm sweet paprika
  • Pinch cayenne pepper
Instructions:
  • Prepare the Romesco Sauce by blending all the ingredients in a food processor until smooth. Add salt and pepper to taste.
  • Peel and devein prawns, keeping tails on. Cut prosciutto slices into thirds lengthwise and wrap one piece around each prawn, leaving tails exposed.
  • In a large frying pan over medium-high heat, heat oil. Cook prawns in 2 batches, turning occasionally, for 5 minutes or until golden and cooked through.
  • Present the prawns alongside romesco sauce and a generous sprinkle of fragrant oregano.
