BBQ seafood skewers with romesco sauce

Savour the rich, smoky sauce with delicate seafood for a perfect pairing!
Ingredients:
  • 12 medium green prawns, peeled (tails intact), deveined
  • 8 small squid hoods, halved lengthways
  • 450g firm, thick white fish fillets, cut into 2cm pieces
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
  • 375.00 ml Romesco Sauce (see notes)
  • 1 lemon, cut into wedges
  • Mixed salad leaves, to serve
  • Crusty bread, to serve
Instructions:
  • Skewer prawns on 4 skewers, squid on another 4, and fish on the last 4. Drizzle with oil and season generously with salt and pepper.
  • Preheat a barbecue grill or chargrill pan to medium-high heat. Grill skewers, turning occasionally, for about 3 minutes until they have a nice char and are cooked through.
  • Garnish seafood skewers with fresh parsley and plate with Magic Romesco Sauce, lemon wedges, mixed salad leaves, and crusty bread for a delightful presentation.
