Succulent prawn skewers with a zesty kick, ideal for a hassle-free picnic meal.
Ingredients:
  • 2 garlic cloves, crushed
  • 1 long fresh red chilli, seeded, finely chopped
  • 20.00 ml chopped fresh mint
  • 20.00 ml finely grated lemon rind
  • 18.20 gm olive oil
  • 21.20 gm fresh lemon juice
  • 900g large green prawns, peeled leaving tails intact, deveined
  • Olive oil spray
  • Fresh mint leaves, to serve
  • Lemon wedges, to serve
  • 235g (1 cup) whole-egg mayonnaise (see note)
  • 40.00 ml Red Pepper Tapenade
Instructions:
  • In a food processor, blend the mayonnaise, tapenade, and lemon juice until creamy to create the capsicum mayonnaise.
  • Mix garlic, chili, mint, lemon zest, oil, and lemon juice in a medium bowl. Toss in prawns until coated. Refrigerate for 10 minutes to marinate.
  • Skewer prawns, season with salt and pepper, then grill on high heat for 2-3 minutes per side until golden. Finish with a sprinkle of mint and serve with capsicum mayonnaise and lemon wedges.
