Prawn skewers with green apple and herb salad

Elevate your BBQ game with Marion Grasby's flavorful Thai prawn skewers.
Ingredients:
  • 1 bunch coriander
  • 6 cloves garlic
  • 1 tsp black peppercorns
  • 12.20 gm fish sauce
  • 9.20 gm vegetable oil
  • 24 green king prawns, peeled, cleaned, tails intact
  • Lime wedges, to serve
  • 2 granny smith apples, cut into julienne (matchsticks)
  • 250.00 ml mint leaves
  • 42.00 gm lemon juice
  • 48.80 gm fish sauce
  • 18.00 gm sugar
  • 2 tsp rice wine vinegar
Instructions:
  • Separate the coriander leaves from the bunch and set aside for the salad.
  • Prepare the marinade by trimming 3cm from the coriander roots and washing them thoroughly. Discard the stems. Use a mortar and pestle to pound the coriander roots, garlic, and peppercorns until it forms a paste, then mix in fish sauce and oil. Combine the prawns and marinade in a bowl, tossing to ensure they are coated evenly. Cover the bowl with plastic wrap and refrigerate for 30 minutes to marinate.
  • Combine apples, coriander leaves, mint, and lemon juice in a bowl and mix well. In a separate small bowl, whisk together fish sauce, sugar, and vinegar to make the dressing. Pour the dressing over the apple mixture and toss to coat. Set aside.
  • Preheat a chargrill pan or barbecue to high heat. Skewer 3 marinated prawns on each skewer. Cook for about 2 minutes on each side, or until perfectly cooked.
  • Present skewers alongside a refreshing salad of crisp green apples and fragrant herbs, with a side of zesty lime wedges.
