Prawn skewers with zesty salsa verde.
Ingredients:
  • 15 large cooked prawns, peeled leaving tails intact, deveined
  • 150g chargrilled capsicum, cut into 1.5cm-thick strips lengthways
  • 15 large fresh basil leaves
  • 200g feta, cut into 2cm pieces
  • 125.00 ml fresh basil leaves
  • 125.00 ml fresh continental parsley leaves
  • 1/2 small garlic clove, crushed
  • 40.00 ml baby capers, rinsed, drained
  • 42.00 gm fresh lemon juice
  • 18.20 gm olive oil
Instructions:
  • Prepare the salsa verde by blending basil, parsley, garlic, capers, and lemon juice in a food processor. Slowly drizzle in the oil while processing until a smooth mixture forms.
  • Skewer a prawn followed by a piece of capsicum and a basil-wrapped feta on a bamboo skewer. Repeat with the rest of the prawns, capsicum, basil, and feta to make a total of 15 skewers.
  • Garnish the skewers with the flavorful salsa verde before serving.
