Impressive dish for a memorable dinner.
Ingredients:
  • 46.80 gm wholegrain mustard
  • 20.00 ml green peppercorns, drained, roughly chopped
  • 40.00 ml fresh rosemary, chopped
  • 375ml bottle beer
  • 6 garlic cloves, peeled
  • 1.5kg piece beef Scotch fillet
  • 382.50 gm chicken style liquid stock
  • 100g butter, softened
Instructions:
  • Mix together mustard, peppercorns, rosemary, sugar, and 1/4 cup of beer in a bowl (refer to Note). Smash half of the garlic cloves and include them in the beer mixture.
  • Secure the beef with kitchen string every 5cm. Massage the entire surface with the flavorful beer mixture. Chill in the refrigerator for 2 hours or overnight, if desired.
  • Preheat oven to 200C/180C fan-forced. Place marinated beef in a roasting pan. Pour in stock, remaining beer, and garlic. Roast for 1 hour for medium doneness. Transfer garlic cloves to a bowl. Cover beef with foil and let it rest for 20 minutes. Mash garlic with a fork until smooth, then mix in butter, salt, and pepper until creamy.
  • Trim and discard any string from the beef before slicing. Serve the beef with garlic butter and pan juices, if preferred.
