Slow-Cooker Root Beer Barbecue Beef Sandwiches

Slow cook beef roast with simple ingredients for an irresistible family favorite.
Ingredients:
  • 1 boneless beef rump roast (4 lb)
  • 2 cups barbecue sauce
  • 1 cup root beer
  • Dash salt and pepper, if desired
  • 16 sandwich buns, split
Instructions:
  • Place the beef in a 3 1/2- to 4-quart slow cooker. Combine 1 1/2 cups of barbecue sauce and root beer in a 4-cup measuring cup or bowl, then pour over the beef.
  • Cover and simmer on Low heat for 10 to 12 hours.
  • About 20 minutes before serving, take out the beef from the slow cooker and place it on a large plate. Pour the juices from the slow cooker into a 12-inch skillet. Cook over medium-high heat for about 15 minutes, stirring occasionally, until the juices are thickened and reduced to about 3 cups. While the juices are reducing, shred the beef using 2 forks and then return it to the slow cooker.
  • Combine the remaining 1/2 cup of barbecue sauce with the reduced juices in the skillet, then pour the mixture over the shredded beef in the slow cooker. Season with salt and pepper to taste. Serve by spooning approximately 1/2 cup of the beef mixture into each bun.
