Ingredients:
  • 4 small red or gold beets, stems removed, peeled, cut into 1/4-inch slices (about 2 cups)
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 4 cups mixed baby greens (from 5-oz package)
  • 1/2 cup chopped red onion
  • 1/2 cup crumbled feta cheese (2 oz)
Instructions:
  • Arrange the beets in a 9-inch microwavable pie plate, slightly overlapping them. Pour in 1/4 cup of water and cover with plastic wrap. Microwave on High for 4 to 5 minutes, or until the beets are almost tender when pierced with a fork. Drain the beets before moving on.
  • In a small bowl, whisk together oil and vinegar until blended. Place baby greens on a large serving plate, then arrange cooked beets on top. Drizzle dressing over the beets and greens, and finish by topping with onion and cheese.
