Quinoa burger with beet and feta relish

Golden quinoa patty burger with sweet baby beetroot, apple, and feta relish.
Ingredients:
  • 250ml (1 cup) water
  • 125.00 ml white quinoa, rinsed
  • 25g (1/4 cup) rolled oats
  • 40.00 ml finely grated parmesan
  • 40.00 ml chopped fresh chives
  • 2 eggs, lightly whisked
  • 2 zucchini, peeled into ribbons
  • 2 yellow squash, thinly sliced
  • 4 wholegrain bread rolls, split
  • Baby spinach leaves, to serve
  • Low-fat mayonnaise, to serve
  • 150g baby beetroot, scrubbed, peeled, chopped
  • 15.90 gm lemon juice
  • 50g green apple, chopped
  • 50g low-fat feta
Instructions:
  • In a small saucepan over medium heat, combine the water and quinoa. Bring to a boil, then reduce heat to low and simmer for 12-14 minutes until liquid is absorbed. Let cool completely.
  • In a bowl, mix quinoa, oats, parmesan, chives, and egg. Season generously and let it sit for 10 minutes before proceeding.
  • Prepare a flavorful relish by combining beetroot and lemon juice in a food processor until finely chopped. Introduce apple and feta, then process until a coarse paste is achieved. Don't forget to season to taste.
  • Preheat a chargrill to medium heat. Toss zucchini and squash in a bowl with olive oil and season. Grill for 3-4 minutes, tossing occasionally, until tender and lightly charred.
  • 1. Heat oil in a large non-stick frying pan over medium heat. 2. Place two 8cm egg rings in the pan and divide half of the quinoa mixture between them, flatten gently. 3. Cook for 2 minutes until golden, then remove the egg rings and carefully flip the quinoa patties. 4. Cook for an additional 2 minutes until the patties are golden and crisp. 5. Transfer the patties to a plate lined with paper towels to drain excess oil. 6. Repeat with the remaining quinoa mixture.
  • Place a generous spoonful of beet relish, some fresh spinach leaves, a juicy patty, grilled vegetables, and a dollop of creamy mayonnaise on each roll base. Finish off with the roll tops.
