Spicy venison quinoa with veggies and cayenne - a lean twist on dirty rice!
Ingredients:
  • 2 cups low-sodium chicken broth
  • 1 pound ground venison
  • 1 green bell pepper, chopped
  • 0.5 red bell pepper, chopped
  • 6 cloves garlic, chopped
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon blackened seasoning
  • 1 tablespoon extra-virgin olive oil
Instructions:
  • In a saucepan, bring chicken broth and quinoa to a boil. Cover, reduce heat to medium-low, and simmer for 15 to 20 minutes until quinoa is tender and broth is absorbed.
  • Combine all the ingredients in a large bowl: venison, onion, green bell pepper, red bell pepper, egg, garlic, paprika, cumin, sea salt, blackened seasoning, and cayenne pepper.
  • In a skillet over medium heat, sauté the venison mixture in olive oil until browned for about 15 minutes. Then, add quinoa and continue to cook and stir until heated through for about 2 minutes.
