Elevate dirty rice with pork shoulder, Andouille sausage, aromatic veggies, and a generous serving of chicken liver for extra richness.
Ingredients:
  • 1 tablespoon vegetable oil
  • 6 ounces boneless pork shoulder, diced
  • 1 yellow onion, diced
  • 0.5 cup diced celery
  • 0.5 cup diced green bell pepper
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons freshly ground black pepper
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried thyme
  • 1 andouille sausage, diced, or to taste
  • 2 cups long-grain rice
  • 8 ounces chicken livers, minced
  • 4 cups chicken broth
  • 2 teaspoons kosher salt, or to taste
  • 1 large bay leaf
  • 1 dash Worcestershire sauce
  • 0.25 cup sliced green onions
  • 0.25 cup chopped Italian parsley
Instructions:
  • Prepare all the ingredients.
  • In a high-sided pan over medium-high heat, sear the pork in hot oil until well browned and fat is rendered, for about 5 to 7 minutes.
  • Sauté onion, celery, and bell pepper until they become translucent, around 5 minutes.
  • Add the paprika, cumin, black pepper, cayenne, garlic powder, oregano, and thyme to the mixture. Cook for around 5 minutes, stirring occasionally, until the vegetables soften further.
  • Lower the heat to medium and introduce the andouille sausage, stirring and cooking for 2 to 3 minutes to enhance the flavors. Incorporate the rice and chicken livers, ensuring they are evenly coated.
  • Pour in flavorful broth, sprinkle in a touch of salt, and bring to a gentle simmer on medium-high heat.
  • Stir in bay leaf and Worcestershire sauce, cover tightly, then simmer over medium-low heat. Cook undisturbed until most of the liquid is absorbed and rice begins to soften, approximately 25 minutes.
  • Mix in the vibrant green onions and fragrant parsley until well combined. Cover the dish and cook over gentle heat until the rice reaches tender perfection, approximately 10 minutes.
  • Before indulging in this delightful dish, savor each bite to ensure the perfect balance of flavors, and elegantly remove the bay leaf prior to presenting.
