Vegan, gluten-free burger with sweet potatoes, kidney beans, and quinoa - simple and delicious!
Ingredients:
  • 2 medium sweet potatoes, peeled and cubed
  • 1 (15 ounce) can red kidney beans, rinsed and drained
  • 0.25 red onion, grated
  • 1 clove garlic, grated
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 0.75 cup cooked quinoa
  • 1 tablespoon olive oil, or as needed
Instructions:
  • In a large pot, submerge sweet potatoes in water and bring to a boil. Simmer on medium-low heat until tender for approximately 20 minutes. Drain and transfer to a bowl.
  • Combine mashed sweet potatoes, kidney beans, onion, and garlic until well mixed. Stir in salt, black pepper, cumin, paprika, and cayenne. Fold in cooked quinoa, then form into patties.
  • In a pan over medium-high heat, brown patties in olive oil for 5 to 7 minutes on each side.
