Brilliant veggie burger

Irresistible vegan burger with easy-to-make patties, spiced mayo, and onion rings. Customize toppings for a delicious meat-free meal!
Ingredients:
  • 200 g frozen sweetcorn
  • 400 g mixed frozen peas and broad beans
  • ½ a bunch of fresh coriander (15)
  • 75 g plain flour plus extra for dusting
  • 1 pinch of ground cumin
  • 1 teaspoon cayenne pepper
  • 1 tablespoon sesame seeds
  • 1 tablespoon sunflower seeds
  • olive oil
  • ½ an iceberg lettuce
  • 2 ripe tomatoes
  • 2 sprigs of fresh basil
  • 2 gherkins
  • 1 ripe avocado
  • 1 lime
  • 4 large quality burger buns
  • 1 punnet of cress
  • tomato ketchup
  • 2 spring onions
  • ½ a fresh red chilli
  • ½ a clove of garlic
  • 2 heaped tablespoons jarred chickpeas
  • 1 teaspoon English mustard
  • 1½ tablespoons sun-dried tomato paste
  • 1 splash of brandy
  • 1 lemon
  • extra virgin olive oil
  • 1 large onion
  • 120 g self-raising flour
  • ½ teaspoon baking powder
  • 200ml golden ale or IPA (cold)
  • 600 ml sunflower oil or sunseed oil for frying
Instructions:
  • Thaw the frozen vegetables in a food processor for 15 minutes. Add coriander (including stalks), flour, cumin, cayenne, sea salt, and black pepper. Blend until a rough paste forms. Mix in sesame and sunflower seeds until combined. Shape the mixture into 4 patties and coat lightly with flour. Chill in the freezer for 10 minutes, then transfer to the fridge. Preheat the oven to 160ºC/325ºF/gas 3. Make vegan mayo by blending spring onions, chili, garlic, chickpeas, mustard, tomato paste, brandy, lemon juice, salt, pepper, and olive oil until smooth. For onion rings, soak sliced onions in vinegar and salt. Make a batter with flour, baking powder, and ale. Dip onion rings in batter and fry until golden and crisp. Cook patties in a pan until golden and crispy, then transfer to the oven. Mix shredded lettuce with half of the vegan mayo. Prepare tomatoes, gherkins, avocado, and lime juice. Toast burger buns. Assemble burgers with lettuce, tomatoes, basil, cress, avocado, gherkins, and onion rings. Serve with ketchup on the side. Enjoy!
