Speedy quiche traybake

Simplify quiche making with this brilliant veggie traybake.
Ingredients:
  • 6 medium free-range eggs
  • 1 bunch of spring onions
  • 55 g mature Cheddar cheese
  • 1 large courgette
  • 300 g broccoli
  • 1 x 250 g pack of ready-rolled filo pastry
Instructions:
  • 1. Preheat your oven to 180°C/350°F/gas 4 and generously grease a large 25cm by 35cm roasting tray with 1 teaspoon of olive oil. 2. Beat the eggs in a bowl with a fork. 3. Layer the filo sheets in the tray, alternating between horizontal and vertical placement, brushing a little beaten egg between each sheet. Make sure to cover the base and sides of the tray. 4. Add a final brush of egg to the top layer of filo and trim any excess pastry. 5. Slice the spring onions and combine them in the bowl with coarsely grated Cheddar cheese and courgette, as well as the sliced broccoli. Season with salt and pepper, then mix well. 6. Pour the mixture into the pastry case, ensuring it's evenly spread, and sprinkle the reserved cheese on top. 7. Bake in the bottom of the oven for 35 minutes until the pastry is golden and the filling is set.
