Brilliant bhaji burger

Delicious paneer and squash patty with mango chutney and poppadom topping - a guaranteed crowd favorite! Try it now!
Ingredients:
  • 1 red onion
  • 2 cloves of garlic
  • 2 fresh green chillies
  • 1 big bunch of fresh coriander (60g)
  • 75 g paneer cheese
  • 200 g butternut squash
  • 4 cm piece of ginger
  • 100 g plain flour
  • 1 lime
  • 2 teaspoons rogan josh curry paste
  • 75 g natural yoghurt
  • 1 baby gem lettuce
  • 4 soft burger buns
  • 2 uncooked poppadoms
  • mango chutney
Instructions:
  • Prepare the onion, garlic, chillies, and coriander stalks as directed, then combine in a bowl with grated paneer, squash, and ginger. Add flour, sea salt, black pepper, lime juice, and curry paste with water. Mix well. Heat oil in a frying pan and shape the mixture into 4 rounds, frying until golden brown and cooked through. Blend most of the coriander with yogurt to make a sauce, season it. Shred lettuce, warm burger buns, and microwave poppadoms. Assemble by spreading coriander yogurt on buns, adding poppadoms, bhaji burger, mango chutney, coriander leaves, and lettuce. Top with remaining bun piece. Enjoy with a cold beer and extra chili if desired.
