Festive sprout recipe with roasted chestnuts, perfect for Christmas. Enjoy on the day or Christmas Eve.
Ingredients:
  • 2 onions
  • ½ a bunch of fresh sage (15g)
  • 6 rashers of higher-welfare smoked streaky bacon
  • olive oil
  • 200 g vac-packed chestnuts roasted and peeled (shelled weight)
  • 1 kg Brussels sprouts
  • 2 large knobs of unsalted butter
Instructions:
  • Peel and chop the onions, then finely chop the sage leaves. Heat a large pan over high heat until hot. Slice the bacon into strips, add to the pan with oil, and reduce heat to medium. Cook until lightly golden, then crumble in the chestnuts. Cook for about 5 minutes until deep golden, then add onions and sage. Reduce heat to low and cook slowly for 30 minutes, stirring occasionally. Meanwhile, trim and prepare the Brussels sprouts. Boil in salted water for 5 minutes until slightly undercooked. Drain, then mix with the chestnut mixture. Add butter, season, and serve or store in the fridge to reheat when needed.
