Wholesome veggie burgers for a quick, nourishing meal that boosts health and energy. Ready in 30 minutes.
Ingredients:
  • 1/2 red onion, cut into rounds
  • 31.50 gm lemon juice
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, coarsely grated
  • 1 parsnip, coarsely grated
  • 400g can butter beans, rinsed, drained, mashed (see note)
  • 40.00 ml flat-leaf parsley, finely chopped
  • 1 tsp lemon rind
  • 40.00 ml plain flour
  • 163.35 gm vegan mayonnaise
  • 20.00 ml sriracha
  • 4 wholegrain bread rolls, split, toasted
  • 60g baby spinach leaves
  • 49.50 gm sesame seeds (white and black)
Instructions:
  • Mix the diced onion with freshly squeezed lemon juice in a bowl and let it sit for a moment.
  • Heat oil in a large frying pan until shimmering. Sauté onion for 3 minutes until translucent. Add carrot, parsnip, and garlic, cook for 4 minutes until tender. Transfer to a chilled plate to cool quickly.
  • Mash beans with a fork, mix with vegetables, parsley, and rind. Season, shape into 4 patties, dust with flour, and coat with sesame seeds.
  • In a large non-stick frying pan over medium heat, heat oil. Cook patties until golden, about 3-4 minutes per side.
  • Mix together the mayonnaise and sriracha in a bowl. Spread half of the spicy mayo on the bread bottoms. Layer on the baby spinach, patties, and drained onion. Add dollops of the remaining spicy mayo, then close the sandwiches with the bread tops.
