Delicious vegan burgers made with black beans, sweet potatoes, and flavorful spices like mustard, cumin, cinnamon, and ginger.
Ingredients:
  • 1 large sweet potato
  • 1 cooking spray
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 0.5 cup quick cooking oats
  • 0.25 cup chopped onion
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground cumin
  • 0.25 teaspoon freshly grated ginger
  • 1 pinch ground cinnamon
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Use a fork to make a few holes in the sweet potato, then place it on a greased baking sheet.
  • - Roast sweet potato in the preheated oven until fork-tender, about 35 to 45 minutes. Let cool until easily manageable. Lower the oven temperature to 350°F (175°C) and grease a baking sheet with cooking spray.
  • 1. Peel the sweet potato and transfer it to a large bowl. Mix in black beans and mash together using a whisk or fork. Stir in oats, onions, Dijon mustard, cumin, ginger, salt, and cinnamon until thoroughly combined. With damp hands, form the mixture into 6 patties and arrange them on a baking sheet.
  • Bake in the preheated oven for about 8 minutes on each side until perfectly cooked inside and crispy outside.
