Black Bean and Walnut Burgers

Satisfying black bean burgers with sweet potato, nuts, spicy pepper, oats, and flaxseed.
Ingredients:
  • 0.5 cup walnuts
  • 0.5 cup rolled oats
  • 1 tablespoon flax seeds
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 pinch ground cinnamon
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 0.5 cup mashed cooked sweet potato
  • 1 egg, beaten
  • 0.25 cup minced onion
  • 1 Fresno chile pepper, seeded and minced
  • 1 small crimini mushroom, minced
  • 3 cloves garlic, minced
  • 0.5 teaspoon soy sauce
  • 0.5 cup vegetable oil
Instructions:
  • In a food processor, pulse walnuts until coarsely powdered. Add oats, flax seeds, cumin, paprika, salt, and ground cinnamon; pulse until oats are coarsely ground. Add black beans and sweet potato; blend until smooth. Transfer mixture to a mixing bowl.
  • Combine egg, onion, Fresno chile, crimini mushroom, garlic, and soy sauce with the black bean mixture until well combined; form into 6 patties.
  • In a skillet, heat vegetable oil over medium-high heat until it shimmers. Fry patties until a deep-brown crust forms, about 5 minutes on each side.
