Indulgent fudgy chocolate brownies made with black beans for extra richness. Easily customizable to be gluten-free, sugar-free, and vegan by swapping in any plant-based milk.
Ingredients:
  • 425g can black beans, drained, rinsed
  • 12 fresh dates, pitted
  • 52.50 gm coconut oil
  • 64.38 gm milk
  • 1 tsp vanilla bean paste
  • 125.00 ml raw cacao
  • 9.20 gm walnuts, halved
  • 20.00 ml pistachios
  • 20.00 ml hazelnuts, halved
Instructions:
  • Preheat your oven to 180C (160C fan-forced). Grease and line a 16cm x 26cm baking tin with baking paper for easy removal.
  • Blend beans until smooth, making sure to scrape down the bowl occasionally (about 1-2 minutes). Incorporate dates, oil, milk, and vanilla until smooth. Blend in cacao until well combined. Transfer mixture to a prepared tin and smooth the surface using a spatula.
  • Place nuts elegantly on top in 16 clusters (think of how you will slice the brownie post-baking). Bake for 20 minutes or until a delicious crust forms on top. Allow to cool in the pan before cutting into 16 delightful rectangles.
