Colorful veggie burgers with smoky cauliflower patty, beetroot dip, and apple-cabbage slaw - a vibrant and flavorful vegetarian dinner option.
Ingredients:
  • 2 x 250g pkts Wildly Good Smoky Cauliflower Burgers
  • 1 red apple, cored, cut into matchsticks
  • 1/4 small red cabbage, shredded
  • 1/2 small red onion, thinly sliced
  • 125.00 ml mint leaves, torn
  • 1 lemon, rind finely grated, juiced
  • 39.60 gm vegan mayonnaise or garlic aioli
  • 4 High Fibre Low GI 7 Seeds Rolls, split, toasted
  • 120g dip
Instructions:
  • Preheat a barbecue grill or frying pan over medium-high heat. Coat the burgers with olive oil spray and season them. Grill the burgers for 2-3 mins on each side until they are lightly charred and heated through.
  • In a large bowl, mix together the apple, cabbage, onion, mint, and lemon rind. Drizzle with 1 tablespoon of lemon juice, season with salt and pepper, and toss everything together until well combined.
  • Mix the mayonnaise or aioli with 1 tsp of fresh lemon juice in a small bowl.
  • Place the roll bases on serving plates, generously spread with beetroot dip, add the burgers, mayonnaise or aioli mixture, apple mixture, and finally top with the roll tops.
