Try low-carb cauliflower fries for a delicious and satisfying twist on a classic favorite.
Ingredients:
  • 0.5 cup mayonnaise
  • 1 tablespoon minced dill pickle
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon Louisiana-style hot pepper sauce
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 1 medium head cauliflower, cut into florets
  • 0.5 cup shredded Cheddar cheese
  • 2 ounces cream cheese
  • 1 large egg
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons all-purpose flour
  • 1 tablespoon dried parsley
  • 2 teaspoons seafood seasoning (such as Old Bay®)

Instructions:
  • In a small bowl, mix together mayonnaise, pickle, mustard, hot sauce, garlic powder, paprika, and cayenne pepper until well combined. Refrigerate the remoulade until ready to use.
  • Microwave cauliflower for 6 minutes until tender. Pulse in batches in a food processor until it resembles rice. Squeeze riced cauliflower in a dish towel to remove excess liquid.
  • In a large microwave-safe bowl, melt together Cheddar cheese and cream cheese for 30 seconds. Stir well, then heat for another 30 seconds. Add riced cauliflower, egg, Parmesan cheese, flour, parsley, and seafood seasoning. Mix until fully combined. Cover and chill dough for 1 hour before proceeding.
  • Preheat the oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
  • Shape the cauliflower dough into wedges using your hands, then place them on the baking sheet. Give each wedge a gentle spray of cooking oil on top.
  • Bake in the oven until perfectly crispy, for 35-40 minutes. Enjoy with tangy remoulade for dipping.
