Wholesome vegan burgers with walnuts, quinoa, chickpeas, and grated beets for a hearty, chewy texture. Versatile recipe for pan-frying, baking, or grilling.
Ingredients:
  • 1/2 cup red quinoa, rinsed
  • 1 cup water
  • 2 tablespoons ground flax seeds
  • 2 tablespoons tamari or soy sauce (see recipe note)
  • 1 (15-ounce can chickpeas), drained (save 2 tablespoons of liquid)
  • 1 cup rolled oats (not instant)
  • 2 medium scallions, chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup shredded beet (from one 2-inch beet)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • Canola oil
  • 6 hamburger buns, for serving
Instructions:
  • Prepare the quinoa: In a small pot, bring 1 cup of water to a boil. Add the quinoa and simmer on low with the lid on for 15 minutes until all the water is absorbed. Remove from heat, fluff with a fork, and allow it to cool.
  • Prepare the burger mixture: Combine flax, tamari, and 2 tablespoons of chickpea liquid in a glass measuring cup and let it thicken. Grind oats in a food processor until powdery yet slightly chunky, then transfer to a large bowl. In the same processor, pulse drained beans, scallions, walnuts, beet, cumin, smoked paprika, salt, and flax mixture until you have a chunky mash. Combine this mixture with the ground oats, then add cooled quinoa. Mix thoroughly using your hands. Divide the mixture into 6 portions, shape them into 3/4-inch thick patties using a 1/2 cup measure, and place them on a plate or sheet pan.
  • Let the burgers rest in the fridge, uncovered for 30 minutes, or cover tightly and refrigerate for up to 24 hours.
  • For baking, preheat the oven to 400°F and heat a sheet pan with canola oil. Place the burgers on the pan, brush with oil, and bake for 10 minutes. Flip with a spatula and bake for another 10 minutes. For pan-frying, heat a skillet, add oil, and cook each patty for 3 minutes on each side. For grilling, preheat to medium-high, grill the burgers on oiled foil for 7-10 minutes per side.
