Satisfying veggie burgers with a meaty umami flavor from mushrooms, rice, beans, and nuts that will impress your family.
Ingredients:
  • 1 (16 ounce) package cremini mushrooms, cut in half
  • 0.5 small onion, chopped
  • 3 tablespoons olive oil, divided
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (8.8 ounce) pouch cooked brown rice, cooled
  • 0.5 cup walnuts
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 2 teaspoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 0.5 teaspoon kosher salt, or more to taste
  • 0.5 teaspoon ground black pepper, or more to taste
  • 1 large egg
  • 0.75 cup dry bread crumbs
  • 8 slices Muenster cheese
  • 8 (2 ounce) hamburger buns, split and toasted
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and elegantly line a rimmed baking sheet with foil.
  • Spread a delightful mix of mushrooms and onions on the baking sheet and gently drizzle with 1 tablespoon of oil, tossing to ensure every piece is coated evenly.
  • Roast in a preheated oven for 10 minutes, then lower the heat to 425 degrees F (220 degrees C). Add black beans to the pan and cook for an additional 5 minutes until mushrooms and onions are browned and beans are dried on the surface.
  • Take the mixture out of the oven and allow it to cool for 10 minutes.
  • Transfer the mixture to a food processor, then add rice and walnuts. Pulse until roughly chopped. Add Worcestershire sauce, ketchup, soy sauce, garlic powder, paprika, chili powder, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Pulse until ingredients are just combined. Finally, add the egg and pulse until just combined.
  • Place the mixture into a medium bowl and gently incorporate the bread crumbs until fully combined. Refrigerate for 10 minutes.
  • Shape mixture into 8 tantalizing patties and generously season each with a sprinkle of salt and pepper.
  • In a large skillet, heat 1 tablespoon of oil until shimmering. Add 4 patties and sear without moving until golden brown and a delicious crust forms, around 4 minutes. Gently flip and cook until fully cooked, for an additional 4 to 5 minutes. Finish them off with a slice of Muenster cheese and stack onto toasted buns.
  • Drizzle the skillet with the remaining 1 tablespoon of oil and proceed to cook the rest of the patties.
