Recreate a refreshing vegetable sandwich with crisp, cool flavors inspired by the best bakery. Ideal for any season!
Ingredients:
  • 1 cup canned garbanzo beans (chickpeas), drained, rinsed
  • 0.125 cup tahini
  • 0.5 teaspoon garlic powder
  • 1 pinch paprika
  • 1.5 teaspoons olive oil
  • 1 tablespoon water
  • 2 tablespoons fresh lemon juice
  • 0.33333334326744 cup chopped fresh cilantro
  • 0.25 cup water
  • 4 teaspoons red wine vinegar
  • 2 teaspoons extra-virgin olive oil
  • 1 pinch salt
  • 0.5 teaspoon sesame oil
  • 0.5 cucumber, thinly sliced
  • 1 large tomato, sliced
  • 1 small red onion, thinly sliced
  • 4 slices bread
  • 0.25 cup crumbled feta cheese
  • 0.66666668653488 cup shredded lettuce
Instructions:
  • Place garbanzo beans, tahini, garlic, 1 tsp salt, garlic powder, and paprika in a blender. Pour in 1 1/2 tsp olive oil, 1 tbsp water, lemon juice, and cilantro. Blend until smooth. Set aside.
  • In a bowl, combine 1/4 cup of water, vinegar, 2 teaspoons of extra-virgin olive oil, sugar, a pinch of salt, and sesame oil. Whisk until the sugar dissolves. Add cucumber, tomato, and red onion. Toss to coat the vegetables in the dressing.
  • Take two slices of bread and generously slather them with flavorful cilantro hummus. Sprinkle a generous amount of crumbled feta cheese over the hummus. Add a layer of refreshing shredded lettuce and the delicious vegetable mixture. Drizzle on more dressing as desired and finish by placing the remaining bread slice on top.
