Effortlessly delicious and impressive salad.
Ingredients:
  • 2 small red beetroot
  • 2 small candy beetroot
  • ½ a lemon
  • extra virgin olive oil
  • 1 bag of rocket
  • 40 g watercress
  • 1 small handful of pea shoots optional
  • 2 red eating apples
  • ½ a bunch of fresh marjoram
Instructions:
  • Prepare the beets by scrubbing and finely slicing them, keeping any leaves aside. Quarter, core, and finely slice the apples. Squeeze lemon juice into a clean jam jar, then add three times the amount of extra virgin olive oil. Season with sea salt and black pepper, cover with a lid, and shake well to blend. In a large bowl, combine rocket, watercress, pea shoots, beets, apple slices, and beetroot leaves if available. Pour in enough dressing to coat everything, add marjoram leaves, toss, and enjoy.
