Elevate your Christmas meal with a vibrant salad bursting with shredded carrots, beetroot, apple, and red cabbage.
Ingredients:
  • 125.00 ml dried cranberries
  • 86.63 gm orange juice
  • 150g green cabbage, shredded
  • 1 large carrot, cut into long matchsticks
  • 1 large celery stalk, trimmed, cut into long matchsticks
  • 1 granny smith apple, cored, cut into long matchsticks
  • 1 green onion, cut into long matchsticks
  • 187.50 ml fresh flat-leaf parsley leaves
  • 187.50 ml pecans, toasted, roughly chopped
  • 40.00 ml apple cider vinegar
  • 54.00 gm maple syrup
  • 36.40 gm extra virgin olive oil
  • 11.80 gm wholegrain mustard
  • 1 large beetroot, peeled, cut into long matchsticks
Instructions:
  • Combine the vibrant cranberries with the zesty orange juice in a bowl and let it sit for 15 minutes.
  • Combine the cabbage, carrot, celery, apple, onion, parsley, and pecans in a bowl.
  • In a jug, whisk together vinegar, maple syrup, oil, and mustard. Season with salt and pepper, then add the cranberry mixture and mix well. Pour the dressing over the salad, tossing thoroughly to combine. Let it sit for 10 minutes, tossing occasionally before serving.
  • Before serving, gently incorporate the beetroot into the salad. Serve promptly for optimal freshness.
