Festive dessert with Christmas colors and summer flavors.
Ingredients:
  • 131.25 gm orange juice
  • 40.00 gm caster sugar
  • 500g strawberries, hulled, quartered
  • 200g cherries, pitted
  • 125g raspberries
  • 125g blueberries
  • 300ml thickened cream, whipped
  • 4.40 gm vanilla extract
  • 8 mini vanilla meringues, crumbled
Instructions:
  • In a saucepan, gently heat orange juice and sugar until the sugar dissolves, stirring occasionally. Once dissolved, bring to a boil, then lower the heat and simmer until the mixture slightly thickens, about 5 minutes. Allow it to cool before using.
  • In a large glass or ceramic bowl, combine the strawberries and cooled juice mixture. Toss gently to coat, cover, and let it stand at room temperature for 1 hour. Then, add the cherries, raspberries, and blueberries, and toss everything together to coat evenly.
  • Prepare the meringue crunch by placing cream in a bowl. Add vanilla and meringue, then gently fold everything together. Serve the berry mixture with the delightful meringue crunch.
