Create a vibrant summer fruit pie with peaches, blueberries, and cherries, topped with a lattice crust. Perfect with a scoop of vanilla ice cream for a refreshing summer treat.
Ingredients:
  • 1 (14.1 ounce) package double-crust pie pastry, thawed
  • 3 cups peeled, sliced peaches
  • 1 cup Bing cherries, pitted and halved
  • 1 cup blueberries
  • 1 tablespoon lemon juice
  • 0.5 cup white sugar
  • 3 tablespoons all-purpose flour
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon salt
  • 1 teaspoon white sugar, or as needed
Instructions:
  • 1. Preheat the oven to a piping hot 450 degrees F (230 degrees C). 2. Gently press 1 pie crust pastry into a 9-inch pie plate. 3. Slice the remaining pie crust pastry into elegant 3/4-inch strips for the lattice top and keep them on standby.
  • In a large bowl, combine peaches, cherries, blueberries, and lemon juice. Add white sugar, brown sugar, flour, cinnamon, and salt; mix well to coat the fruits. Transfer the fruit mixture into the pie crust.
  • Place the pie crust strips in a lattice pattern over the fruit filling. Brush the top with milk and sprinkle evenly with 1 teaspoon of white sugar.
  • Place in the preheated oven and bake for 10 minutes. Then, lower the oven temperature to 350 degrees F (175 degrees C) and bake for an additional 45 to 50 minutes, or until the fruit filling is bubbling and the lattice top is lightly browned.
