Cherry-Berry Streusel Bars

Delicious oatmeal cobbler bars made with oat cookie mix, granola, cherry preserves, and fresh blueberries.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup butter, melted
  • 1 egg
  • 3/4 cup (8 oz) tart cherry preserves
  • 2 cups Cascadian Farm® organic oats & honey granola
  • 2 cups powdered sugar
  • 1/4 cup heavy whipping cream
  • 1/2 cup fresh blueberries, blackberries or cherries, if desired
Instructions:
  • Preheat your oven to 350°F and lightly grease a 13x9-inch pan with shortening or cooking spray. In a large bowl, combine cookie mix, melted butter, and egg until a thick dough forms. Press the dough evenly into the pan.
  • Evenly spread the preserves over the cookie dough layer, then sprinkle the granola on top in a uniform manner.
  • Bake for 30 to 35 minutes until cookie layer is just set. Let cool completely for about 1 hour.
  • Cut the mixture into 12 bars by slicing it into 4 rows by 3 rows or into 16 bars by cutting it into 4 rows by 4 rows. Carefully lift the bars out of the pan and place them on a cooling rack or serving platter.
  • Combine powdered sugar and whipping cream in a small bowl until a thin icing forms. Transfer the icing to a small resealable plastic bag, seal it, then cut off a corner to drizzle the icing over the bars. Finish by topping each bar with a few fresh berries. Allow the icing to set before serving. For later consumption, refrigerate the bars tightly covered until ready to serve.
