Irresistible colorful salad with homemade dressing and spiced seed topping.
Ingredients:
  • 55g seed mix
  • 13.60 gm maple syrup
  • 1.25 gm ground cumin
  • 1 bunch radishes, trimmed, thinly sliced
  • 1 bunch watercress, sprigs picked
  • 2 x 250g pkts Baby Beetroot, thinly sliced
  • 1/2 red onion, thinly sliced
  • 60ml olive oil
  • 20.00 ml Apple Cider Vinegar
  • 20.00 ml horseradish cream
  • 20.00 ml finely chopped dill
  • 1/2 small garlic clove, crushed
Instructions:
  • Preheat your oven to 180°C and line a baking tray with baking paper. In a bowl, combine seed mix, maple syrup, and cumin. Season with salt and pepper, then spread the mixture evenly on the tray. Bake for 10 mins until golden and toasted. Allow to cool for 10 mins before enjoying.
  • In a bowl, combine oil, vinegar, horseradish cream, dill, and garlic. Season to taste.
  • Arrange the radish, watercress, beetroot, and onion on a platter. Top with dressing and spiced seeds before serving.
