Whip up a vibrant beet and apple porridge with a burst of blueberries, pepitas, and maple syrup for a wholesome breakfast bowl.
Ingredients:
  • 250g beetroot, peeled, coarsely grated
  • 515.00 gm milk, plus extra to serve
  • 2 pink lady apples
  • 125.00 gm traditional rolled oats
  • Pinch of salt
  • 1.25 gm mixed spice
  • 84.38 gm maple syrup, plus extra to serve (optional)
  • 20.00 ml pepitas, toasted
  • 60g fresh blueberries
Instructions:
  • In a medium saucepan over medium heat, gently simmer beetroot with milk and 1 cup of water until the beetroot is tender, stirring occasionally. This should take about 5 to 7 minutes.
  • Grate 1 apple coarsely.
  • Combine the oats, salt, mixed spice, and maple syrup with the beetroot mixture. Cook over medium-low heat for 5 minutes until the oats are soft and the mixture thickens. Then, mix in the grated apple.
  • Core the remaining apple and slice it thinly. Divide the porridge among serving bowls, then top with the sliced apple, pepitas, and blueberries. Drizzle with extra maple syrup if desired and serve with extra milk on the side.
