Bella's Brussels Sprouts with Bacon

Versatile and tasty dish using a unique vegetable, perfect as a side or main.
Ingredients:
  • 0.5 pound bacon, diced
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons butter
  • 0.25 onion, diced
  • 2 cloves garlic, minced
  • salt and black pepper to taste
  • 0.5 cup balsamic vinegar
  • 1.5 pounds Brussels sprouts, trimmed and cut in half
  • 2 cups chicken stock
Instructions:
  • In a large, deep skillet over medium-high heat, cook the bacon until evenly browned but not crispy, about 10 minutes. Remove bacon with a slotted spoon, leaving the grease in the skillet. Keep 2 tablespoons of bacon grease in the skillet and stir in the olive oil, butter, onion, and garlic. Season with salt and pepper. Cook and stir until the onion softens and the garlic lightly browns, 5 to 7 minutes.
  • Combine balsamic vinegar and simmer until reduced by 1/3. Add bacon, Brussels sprouts, and chicken stock. Bring to a boil, then simmer until Brussels sprouts are tender but slightly firm, around 10 minutes.
