Bermuda's festive Cassava Pie blends eggs, vanilla, nutmeg, ginger with yucca for a holiday treat.
Ingredients:
  • 12 eggs
  • 1 tablespoon salt
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground nutmeg
  • 1 teaspoon ground dried ginger
  • 3 cups sugar
  • 3 sticks butter
  • 5 pounds frozen cassava (yucca), thawed and drained
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease a 9x13-inch baking pan.
  • In a bowl, whisk together eggs, salt, vanilla extract, nutmeg, and ginger to create a fluffy mixture. In a separate bowl, cream together sugar and butter. Gently fold the egg mixture into the butter mixture.
  • In a large bowl, combine cassava with the egg-butter mixture, then pour the mixture into the prepared baking pan.
  • Bake in a preheated oven at 350 degrees F for 1 hour. Lower the temperature to 250 degrees F and bake for an additional 2 to 2 1/2 hours, or until the pie is set.
