Deliciously moist sour cream cake with berries and almonds, perfect for a sweet treat with your favorite hot beverage.
Ingredients:
  • 0.66666668653488 cup white sugar
  • 2 eggs, at room temperature
  • 1 cup sour cream, at room temperature
  • 0.5 teaspoon almond extract
  • 0.5 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 cup almond flour
  • 1 teaspoon ground cardamom
  • 2 cups mixed frozen berries
  • 2 tablespoons sliced almonds
  • 1 tablespoon turbinado sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch square baking pan.
  • In a large bowl, cream together sugar and butter using an electric mixer until fluffy, about 3 to 5 minutes. Add eggs one at a time, beating well after each addition. Stir in sour cream, almond extract, and vanilla extract until the batter is smooth.
  • Combine all-purpose flour, almond flour, baking soda, baking powder, cardamom, and salt in a bowl. Gently fold into the batter until just combined on low speed.
  • Evenly distribute the batter in the prepared pan. Top with a generous scattering of berries, followed by a sprinkle of sliced almonds and turbinado sugar.
  • Bake in the preheated oven for 45 to 50 minutes until a toothpick inserted in the center comes out clean. Allow to cool in the pan before serving warm or at room temperature.
