"Indulge in a delightful berry cake for your summer picnic."
Ingredients:
  • 100g plain flour
  • 100g ground almonds
  • 300g caster sugar
  • 4.40 gm vanilla extract
  • 8 eggwhites
  • 150g butter, melted, cooled
  • 120g punnet raspberries
  • 150g punnet blueberries
  • 50g flaked almonds
  • Icing sugar, optional, for dusting
Instructions:
  • 1. Preheat your oven to 200°C. Combine flour, ground almonds, sugar, and vanilla in a large bowl, ensuring they are thoroughly mixed. In a separate large bowl, use an electric mixer to whip the egg whites with a pinch of salt until stiff peaks form. Carefully fold the whipped egg whites into the almond mixture, then gently mix in the butter.
  • Prepare the slice tin by greasing and lining it. Pour the cake mixture into the tin. Top with mixed berries and flaked almonds. Bake for 40 minutes or until a skewer comes out clean when inserted in the center. Let it cool in the tin and then dust with icing sugar just before serving. Enjoy on the day it's made for the best taste!
