Arugula salad with summer berries, walnuts, cranberries and homemade berry vinaigrette.
Ingredients:
  • 0.5 cup frozen blueberries
  • 0.5 cup frozen raspberries
  • 0.25 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • Himalayan pink salt and freshly ground black pepper to taste
  • 0.5 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons honey
  • 1 teaspoon Himalayan pink salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 8 cups arugula
  • 0.5 cup fresh blueberries
  • 0.5 cup fresh strawberries, sliced
  • 0.25 cup fresh blackberries
  • 0.25 cup fresh raspberries
  • 0.25 cup walnuts, chopped
  • 0.25 cup dried cranberries
Instructions:
  • Combine blueberries, raspberries, balsamic vinegar, honey, lemon juice, salt, and pepper in a blender and blend for 1 minute or until smooth.
  • While the blender is running, take off the lid and slowly pour in the olive oil in a steady stream. Blend until the vinaigrette is smooth and well combined, for about 10 to 15 seconds.
  • In a large bowl, whisk together lemon juice, honey, salt, and pepper until combined. Gradually drizzle in olive oil while whisking until smooth.
  • Combine arugula, fresh berries, walnuts, and cranberries in a bowl; toss thoroughly with the lemon juice mixture.
  • Separate the salad into four bowls. Drizzle each with your preferred amount of vinaigrette. Serve promptly.
