Irresistible berry and mango muffins - perfect for lunchboxes!
Ingredients:
  • 375.00 gm self-raising flour
  • 70.95 gm caster sugar
  • 345.80 gm buttermilk
  • 56.88 gm olive oil
  • 1 egg
  • 200g frozen mixed berries
  • 1 small mango, peeled, sliced
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced and prepare a 12-hole muffin pan by lining it with paper cases.
  • In a bowl, mix flour and sugar. In a separate jug, whisk together buttermilk, oil, and egg. Gently stir the buttermilk mixture into the flour mixture until just combined (it's okay if it's lumpy). Gently fold in the berries. Spoon the batter into muffin cups and top with mango.
  • Bake for 25 minutes, or until a skewer inserted into the center of one muffin comes out clean. Let them rest in the pan for 5 minutes, then transfer them to a wire rack to cool.
