Modern twist on classic white cake using Betty Crocker™ Super Moist™ mix.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 3 egg whites
  • 1/8 teaspoon cream of tartar
  • 4 tablespoons sugar
  • 1 cup mixed fresh berries, rinsed
Instructions:
  • Prepare the cake batter as directed on the box using water, oil, and eggs. Divide the batter between two 9-inch round cake pans and bake until golden brown. Allow the cakes to cool completely. Wrap or bag one cake layer and freeze for later use.
  • Preheat the oven to 375°F. In a large bowl, use an electric mixer on high speed to beat the egg whites and cream of tartar until frothy. Slowly add the sugar and continue beating until stiff peaks form. Mix in the vanilla. Spread the meringue over the cooled cake layer, creating a well in the center for the berries.
  • Bake for 12 to 15 minutes, or until the meringue turns a gorgeous golden brown. Let it cool completely on a cooling rack.
  • At serving time, delicately toss the berries with honey until coated. Then, generously fill the cooled cake with the honey-coated berries.
